Makes 40 bars, 30 minutes
1 TblSp Chia seeds
2 TblSp Sesame seeds
3 TblSp Hemp seeds
2 medium Apples
100g Dates, pitted
80g Dried apricots
20g Dried cranberries
100g Rolled oats
20g Quinoa flakes
2 Eggs
¼ cup Raw honey
2 Tblsp Coconut oil, plus extra for greasing the tin
Pre-heat a fan forced oven to 180 degrees. Line a baking tin with a little coconut oil and parchment paper.
Place the chia seeds, sesame seeds and hemp seeds in the bowl of a food processor and blitz for a few seconds, remove from the bowl and set aside. Roughly chop the apples, removing the core and place these in the food processor, blitz until finely chopped. Then add the dates, apricots and cranberries and blitz again until combined. Scrape down the sides and blitz again if you need to. Add the remaining ingredients and mix until thoroughly combined.
Transfer to prepared tin and press flat and even all over. Bake in pre-heated oven for 20 minutes or until just golden on top.
Cut into shapes you desire, I cut 40 mini bar shapes. Great for kids’ lunch boxes!
