Makes 400ml, 1hr 45 minutes
1 Dunn & Walton Elderberry Tonic Kit (or 1 cup elderberries, 2 cinnamon quills & 8 cloves)
4 cups filtered water
2 inch knob of ginger, chopped
Juice & peel of 1 lemon, peel chopped
¾ cup raw honey
Add contents of kit to pot with 4 cups filtered water with ginger and lemon peel. Simmer until reduced by half and then strain. Allow to cool to room temperature then stir in lemon juice & honey. Jar and refrigerate. We have 1 Tbs 2-3 times a day when we have a cold, flu or virus.

Elderberries (Sambucus nigra) have been long used throughout the ages by various civilisations such as the Egyptians and Native Americans.
They are rich in anthocyanins, a powerful antioxidant coming from its dark colour.
They also contain quercetin which we will be discussing shortly.
In addition, Elderberries demonstrate anti-viral, antimicrobial, and immune stimulating actions on the body.
Studies have shown that elderberry extract helped to shorten the duration of viral infections and reduce severity of symptoms.
