Makes 15 x 25g balls 20 mins prep time, 2 hrs setting time
1 ½ cups Medjool dates, pitted
1 cup Shredded coconut
¼ tsp Sea salt
1 tsp Vanilla paste
1 tsp Ground cinnamon
3 T Coconut oil
2 T Cocoa Powder
1 cup Crispy rice (I use Nature’s Path cereal)
¼ cup Activated buckwheat
½ cup Desiccated fine coconut, for rolling
In the bowl of a food processor, put the dates, coconut, salt, vanilla, cinnamon, coconut oil and cocoa powder and process on high until combined. The mixture should be sticky. Transfer to a bowl, add the crispy rice and buckwheat, use your hands to combine well.
Roll into approximately 25g balls and toss in the fine coconut to coat the outside. Chill in the fridge for about 2 hrs. Store in the fridge.
